Acidic, neutral and alkaline

The pH scale from 0 to 14 shows how acidic or alkaline a substance is. Below 7 is acidic, 7 is neutral, above 7 is alkaline.

Why

Why does purple red cabbage juice turn pink when you pour in vinegar, and blue-green when you add bicarbonate of soda?

Red cabbage contains a dye that changes colour depending on what you add to it. In vinegar it turns pink, in water with bicarbonate of soda it turns blue-green.

Vinegar is an acid, bicarbonate of soda is a base. With a dye like this, called an indicator, you can see how acidic or how alkaline something is without tasting it. That is much safer.
